The simple version of this recipe is a complete cheat really because it is just assembling ingredients (but then you could argue that is what most recipes are). When someone in our house is unwell, this soup is the go to recipe because it is easy to digest and gives you a hit of all things good for you.
16 store bought dumplings (I find potstickers work well) 1 1/2 liters chicken stock (it's the simple version, dont even think about making it) 3 Baby Bok Choy (I don't know what you call them individually, in my local store they come three with an elastic tied around them) 100 g Swiss Brown Mushrooms halved if small quartered if large Two green onion cut into one inch slices Handful of chopped cilantro
Method
Put the chicken stock in a large saucepan and bring to a boil. Put the dumplings into the boiling stock and boil for 5 minutes (check the cooking times). Add the mushrooms and bok choy and boil until just tender and the filling in the dumplings is completely cooked, about two minutes. Add the green onions and cilantro and serve immediately.
Per Serve (excluding dumplings, because they vary so much) just add the fat/calories etc from the dumplings you choose
