Recipe: Sensational Frittata

This is one of those dishes that look much harder than it actually is. As for the simple version of this dish you can add whatever vegetables you like to the frittata itself, asparagus is great, potato, zucchini, whatever you have around the house. Just make sure you adjust the cooking time so that the vegetables are almost done before you pour in the egg mixture.
Serves four
4 egg whites
1 teaspoon olive oil
2 green onions finely chopped plus one or two more cut into very fine strips
1 cup mushrooms chopped
3 tomatoes, deseeded and chopped
2 oz goats cheese
3 1/2 oz smoked salmon
Method
Wisk the whole eggs and the egg whites together and set aside. In a non stick pan sauté the onions and the mushrooms together until the mushrooms have just wilted, about two minutes. Add the tomato and mix to combine. Pour in the egg mixture and cook on top on the stove until the egg just starts to set around the edges, about two minutes. As the egg is setting use a spatula to form the frittata into a rough square. Put the pan under the broiler (make sure your frying pan can go under the grill) and cook until the egg is just set and browned on top, one or two minutes. Remove from the broiler and allow to cool slightly. Remove the frittata from the pan and onto a chopping board. I find the easiest way to do this to do put the board on top of the frying pan and flip them both together. Cut the frittata into four squares and wrap each square with a slice of smoked salmon. Blanch the green onion strips in boiling water and tie the blanched strips around the salmon and frittata squares. Serve immediately
