Brunch is one of the easiest meals to do well because there is little expectation of greatness when no one is yet properly awake.To that end my sensational versions of breakfast dishes focus predominately on a change of ingredients with only a little tweaking in presentation, with the major difference being that for the simple brunch menu, I just put everything out on a table and let everyone choose what they like, whereas for the sensational I serve everyone individually.
One of the things that I have found with brunch is, if not kept in check, the available options can lead to a serious topple from the proverbial wagon.Between the croissants, the hollandaise sauce, fruit juices and fatty bacon I have been known to fall prey to the 'need for a little lie down after brunch syndrome' on more than one occasion and if I am to be completely honest probably will again.However, as my aim here is to keep things light without resorting to egg white omelets with very little else, let's begin the day with a breakfast that will wow your guests, satisfy the senses and avoid the need for a mid morning siesta.
