Frittatas are the perfect "use up your leftovers' dish because you can pretty much put anything in them. The secret to a good frittata is to use vegetables that don't have too much water in them, so for this reason left over roast vegetables are ideal. I have included a little green onion in the version below but I would caution you that if you are serving this for breakfast, not everyone wants strong flavours first thing in the morning. To that end this is the first recipe that I have written in a while that does not include garlic.
Simple Frittata
Serves four
Ingredients
3 whole eggs 4 egg whites 1 teaspoon olive oil 2 green onions finely chopped 1 cup mushrooms chopped 3 tomatoes, deseeded and chopped 2 oz goats cheese
Method
Wisk the whole eggs and the egg whites together and set aside. In a non stick pan sauté the onions and the mushrooms together until the mushrooms have just wilted, about two minutes. Add the tomato and mix to combine. Pour in the egg mixture and cook on top on the stove until the egg just starts to set around the edges, about two minutes. Put the pan under the broiler (make sure your frying pan can go under the broiler) and cook until the egg is just set and browned on top, one or two minutes. Serve immediately.
