Kitchen Sink Burritos


As I am sure you have worked out, I call these "kitchen sink" because you can put anything you want into them, the ingredient's below are my standard ones.  If you add your own favorites make sure you adjust the calories, especially if your filling of choice is streaky bacon, or in the case of one friend of mine, the chopped baked potatoes from the night before. 

You probably won’t believe me when I say this, but I make these on a work day for breakfast because, chopping aside, they take about one minute.  I cheat by using egg whites in a carton to cut down the time, but I don’t suppose that cracking an egg or two is the most time consuming thing you will ever do in your kitchen, so the choice is yours.  If I am super organized (which is rarely) I will chop my ingredients the night before when I am putting together lunches and then it is really is a one minute breakfast.

Kitchen Sink Burritos

(serves four)

Ingredients

4 Whole wheat tortillas
1 cups of egg whites (as I said I use the carton variety, but this is the equivalent to about four egg whites)
2 Cups of mushrooms, chopped
2 tomato de-seeded and chopped
4 slices of lean Canadian Bacon, chopped
Cooking spray

Method

Not really what one would consider culinary acrobatics, but here is the "method".  Spray a fry pan with cooking spray and fry bacon until lightly coloured, add mushrooms and tomato and whatever else you are throwing in and heat through.  Finally add egg whites and stir until cooked.  Heat your tortilla (I zap it in the microwave for about 10 seconds) and filling, wrap and eat.

Serving Suggestion - I love these with a little salsa or tomato relish, I am also partial to a little cheese (an in some cases a lot of cheese) either way, if you add anything, make sure to remember to add the extra calories.
