I have given you the really low fat version of this recipe below, but if I am having people to brunch I sometimes use whole eggs instead of just the whites. It adds about 54 calories per serve but it really is lovely. Do bear in mind though, if you have been eating very little fats and oils they can sometimes seem a little too rich, given that smoked salmon is particularly oily. A good compromise is to use two whole eggs and two egg whites, which gives you a good balance for only an additional 27 calories per serve.
4 Whole wheat tortillas Four Egg Whites 8 oz Smoked Salmon 1 tomato deseeded and chopped 1/4 cup of red onion finely chopped 1 teaspoon of capers (optional) Fresh Dill Cooking spray
Method
Spray pan with a little cooking spray, add onions and fry until transparent, (2 or 3 minutes). Add tomato and fray until warmed through, then add eggs and cook until set but not rubbery. Remove from heat and add salmon, capers and dill. Warm tortillas in the microwave for 15 seconds. Divide the egg mixture between the four tortillas, warp and serve.
