Tuiles are a great accompaniment to this sorbet, because their sweetness will balance the tartness of the fruit. You can buy templates (or make your own out if plastic lids) and all you do is spread the tuile mix over the template and then you have an interesting shape. Several years ago a actually modified this recipe by adding blue cheese instead of butter and served it with balsamic and fresh figs, slightly off topic I know, but really good as an appetizer if you are not watching your calories.
2 cup raspberries 1 cup blackberries 2 1/2 cups sprite zero 2 teaspoons powdered sugar (optional) 5 Tablespoons Powdered sugar 3 tablespoons all purpose flour 2 egg whites 3 tablespoons melted light butter
Method
Blend the fruit in a blender until pureed. Strain through a sieve to remove the seeds. I like a little pulp in this because I think it gives the sorbet some depth, but you will work out the texture you prefer. Add the strained puree to the sprite mix to incorporate, taste the puree and if you prefer it a little sweeter, add some or all of the powdered sugar. Pour into an ice cream maker and follow the manufactures instructions as to setting times. I say this because ice cream machines are all a little different. Mine I mix for about 30 minutes, but if you just keep an eye on in the first time you will be fine.
Alternative method - This is not the best way, but if you don't have an ice cream maker it works. Freeze the berries first 9or buy frozen ones). Freeze the sprite. Crush the frozen sprite a little and then put the frozen sprite, berries and lemon juice in the blender. Blitz until the mixture has the consistency of sorbet and freeze.
For the tuiles - Mix all ingredients together to form a smooth batter. Spread in rounds on a silicone baking sheet and bake for 5 - 6 minutes in a 350 degree oven. While still hot drape over a glass, rolling pin or whatever you like to give you an interesting shape.
Serve sorbet with tuiles.
Below information is dividing the above by four (e.g if you bake 8 tuiles from the above quantities, two per serve).
