I realise that white chocolate and cheesecake are not typically something that you would find in a collection of lower calorie recipes. These squares are lower in fat and calories than your typical cheesecake by virtue of the fact that there is no cream, as you would find is a traditional cheesecake recipe and secondly because the servings are small. Don’t let the serving size fool you, these babies are rich, and you really only need one or two to satisfy your sweet craving. If white chocolate is not your thing you can always substitute semi sweet which reduces the calories to 129 and 7 g of fat per serve.

White Chocolate Cheesecake Squares

Ingredients
1 ¾ cups (175 grams) reduced fat graham cracker crumbs 4 tablespoons (60 ml) lite butter, melted 2 tablespoons (30ml) honey 2 cups (500g) lite cream cheese 1 cup (155g) white chocolate bits, melted 4 eggs (separated) 2 ½ tablespoons icing sugar ¼ cup plus 2 tablespoons (90 ml) lemon juice 2 teaspoons lemon zest
Method
Preheat the oven to 325 degrees. Combine the graham cracker crumbs with the honey and the butter and mix to combine. Spray a 33 x 23 centimetre (13 x 9 inch) cake pan with non stick spray. Line the pan with the cookie crumb mixture and bake for 12 – 15 minutes or until it just starts to crisp around the edges. Remove from the oven and allow it to cool. Combine the egg yolks, cream cheese, sugar, lemon juice, lemon zest and mix until smooth. Add the melted white chocolate. Wisk the egg whites until they form stiff peaks and fold the egg whites into the cheese mixture. Spoon the cheese mixture on top of the graham cracker base and smooth the top with a knife. Bake in a water bath for 35 – 40 minutes or until just set. Allow to cool and refrigerate over night. Cut into 25 squares and serve. Per Piece
