I am often surpised at how good a recipe can be with only few ingredients.  They seem to fall into two distinct categories, either really amazing, or pretty bloody awful.  However, for most few ingredient recipes, I don't think there is any great secret to what makes an amazing on over a nasty one.  If you are only using a few ingredients, as much as possible the ingredients that you use need to be the best quality you can find.  In this recipe there are very few variables that can actually change, after all Sprite is Sprite.  So make sure that the berries that you buy are the best you can find and I think you will be surprised how good this recipe is.

Fruit Sorbet

(Serves four)

Ingredients

2 cup raspberries
1 cup blackberries
2 1/2 cups sprite zero
2 teaspoons powdered sugar (optional)

Method

Blend the fruit in a blender until pureed.  Strain through a sieve to remove the seeds.  I like a little pulp in this because I think it gives the sorbet some depth, but you will work out the texture you prefer.  Add the strained puree to the sprite mix to incorporate, tast the puree and if you prefer it a little sweeter, add some or all of the powdered sugar.   Pour into an ice cream maker and follow the manufactures instructions as to setting times.  I say this because ice cream machines are all a little different.  Mine I mix for about 30 minutes, but if you just keep an eye on in the first time you will be fine.

Alternative method - This is not the best way, but if you don't have an ice cream maker it works.  Freeze the berries first 9or buy frozen ones).  Freeze the sprite.  Crush the frozen sprite a little and then put the frozen sprite, berries and lemon juice in the blender.  Blitz until the mixture has the consistency of sorbet and freeze.

Serving Suggestions

It's actually really really good with shavings of dark chocolate, pretty much defeats the purpose of having a low fat dessert though, you might as well make a creme brulee. 

On second thoughts, skip the chocolate and just put it in a bowl.
