So here is my take on this. These napoleons are sensational no matter which way you look at it, so to make a simple and a sensational version was actually a pretty tough go. I have included strawberries in this one, but you can use any fruit you like. The best way to really make this sensational is to take time in presentation and buy the best fruit you can find.
preheat the oven to 375 degrees f. Cut the fill sheets of fillo pasty in half, spray each sheet with butter spray and fold in half again. Spray three of the sheets with spray and top with another sheet. Cut each sheet into six so that you have twenty four squares of pastry. Spray the bottom of another tray with spray and place on top of the fillo. The aim here is to bond the four pieces together so that you have one solid piece. Bake the pastry until golden brown, about 10 minutes. Allow to cool.
For the custard mixture - Put the evaporated milk, cornstarch, two tablespoons sugar (or splenda) in a saucepan. Split the vanilla bean and scrape the seeds, add the vanilla and the pod to the milk and bring to a boil stiring constantly. In another bowl miss the egg yolk with the remaining sugar (or splenda). When the milk comes to a boil and thickens remove form the heat and add the egg mixture. Allow to cool.
On a plate place a square of pastry and top with a small amount of the custard mixture. Top with sliced berries and another piece of pastry. Spoon more custard of top, more berries and top with a final piece of pastry. Sprinkle with a little powdered sugar.
Per serve with sugar.
