Chilli fans, and by that I mean real chilli fans, take their chilli very seriously. I am not one of those people.I like heat in my food, but I am not the type of person that wants my scalp to start to itch after the first mouthful.I tell you this to try to give you an indication as to the level of heat in this dish, however the fact remains that cooking for yourself means to can ad as much or as little as you want.If you are of the scalp itching mindset, go right ahead, doing whatever suits you is one of the joys of eating alone.

Serves one Ingredients
1 lb Mussels in their shells 1 clove of garlic 1/3 cup tomato deseeded and chopped ¼ cup of white wine 1 teaspoon fresh chilli, deseeded and chopped 2 teaspoons fresh oregano Olive oil spray
Method
Spray a saucepan large enough to hold all the mussels with a little olive oil spray.Add the garlic and sauté until just transparent.Add the white wine and cook until reduced slightly, around a minute.Add the mussels and cover.When all the mussels have opened, remove from the heat and add the tomato and oregano.Serve immediately, including all the juice that has come from the mussels.This dish is so low in fat and calories that you can afford a little bread to dip in the juice, you’re dining alone, so relish in its garlicky wonder.
