Pasta is my standard fall back when I am cooking for myself.It’s easy, you can keep it in the cupboard or freezer for ever, and it takes next to no time to cook.Obviously the easiest thing to do is just to buy a sauce and do nothing else.But on the days when you feel that you deserve a little better give this sauce a try.You can make it in the time that it takes the water to boil for the pasta and the end result far outweighs the minimal effort that you need to put in.
Linguini with Spinach and Mushrooms
Linguini with Spinach and Mushrooms

Ingredients
100 g linguini 1 clove of garlic crushed 2 slices of Canadian bacon chopped ½ cup of chopped spinach 3 sundried tomato packed in oil but drained and rinsed ¼ teaspoon oil from the tomatoes ¼ cup chopped mushrooms ½ cup of store bought tomato sauce 1 teaspoon dried chilli 1 tablespoon fresh basil finely chopped
Method
Cook the pasta according to directions and until it is cooked to your liking.I’m not going to go into the whole al dente discussion, we’ve all heard it, we know all about it and will continue to cook pasta however we like when cooking it at home.In the meantime add ¼ teaspoon of the oil from the tomatoes to a non stick fry pan and the garlic and sauté until just transparent, 1 – 2 minutes.Add the bacon and sauté for about another minute.Add the spinach, tomatoes, mushroom and chilli and stir until the mushrooms have just wilted.Add the tomato sauce and heat through.If the sauce gets too thick by the time the pasta is ready, add 3 or 4 tablespoons of the water from the pasta to loosen it up again.Mix the pasta through the sauce, add the basil and serve immediately.
