Spinach salad with Shrimp and Goats Cheese

Ingredients
4 oz raw shrimp chopped 1 cup baby spinach leaves 2 tablespoons dried cranberries ¾ oz soft goat cheese 1 teaspoon Dijon mustard 1 teaspoon honey 2 teaspoons red wine or raspberry vinegar
Method
Combine mustard, honey, vinegar in a small bowl and set aside.In a non stick pan, sauté the shrimp until just pink.Combine ½ the dressing with the shrimp while it is still warm.Combine all the other ingredients with the shrimp and the dressing and serve immediately.

Serving Suggestion - This salad is lovely with walnuts, but it does up the fat content. The thing about the fat in walnuts though is that is it a good fat and according to my reading does all sorts of wonderful things for your body. If you add the walnuts the points value on a well known weight loss plan is only 8, so the extra fat doesn't really affect you.
