This dish lends itself to the kind of meal where you have platters full if wonderful food on the table and everyone helps themselves. It also it great if you serve it with either pita bread or tortillas (add the calories of course) and lots of fresh vegetables. That way everyone can fill their pitas with whatever they like. It also makes a great summer picnic dish served that way.
16 oz pork tenderloin 1 teaspoon of meat rub or your choice (optional) Olive oil spray 1 handful of mint leaves, chopped 4-5 large basil leaves, chopped 3 tablespoons mirin 3 tablespoons fat free sour cream 4 tablespoons skim milk 1/2 teaspoon dried mint 1 tsp lite soy sauce 1/4 teaspoon sesame oil 1 clove garlic
Method
Spray a small saucepan with the olive oil spray and sauté the garlic for a minute of two, or until just cooked. Don't let the garlic brown or burn. Preheat the oven to 375 degrees. Sprinkle the pork with the meat rub and bake until just done, about 25 - 30 minutes (you may need a little non stick spray). While the meat is cooking, process the herbs, garlic, sour cream, milk, mirin and soy in a food processor to form the sauce. You can heat this a little is you like, but I like it at room temperature. When the pork is done slice and serve on a platter with the sauce.
