I was recently asked if I had a good salmon recipe and I had to direct the person who asked to a different web site. Not something that I wanted to do again, I set about coming up with a great salmon recipe. Unfortunately I've always had a it of a love hate relationship with fish. Unless it came battered and deep fried it's often been a bit of a disappointment. This opinion changed when I bought wild salmon. The one in the picture came from British Columbia and I was pleasantly surprised with it's price and completely blown away by the taste. If you are not usually a fish fan, do give this a try and you may be converted.
Preheat oven to 400 degrees. Bake salmon fillets for 8 minutes or until just done, do not overcook. In a non stick fry pan sauté the garlic in the olive oil until transparent, about 2 minutes. Add the honey, soy and chicken stock and simmer until thickened, about 5 minutes. If the glaze gets too thick, add a little more chicken stock. Steam the boy coy until just tender, about 3 minutes. Serve the salmon fillets over the boy choy, topped with the soy glaze.
