After a little research I discovered that Italians spell it Lasagne and English speakers spell it Lasagna. Either way it is delicious but can pack a punch in fat and calories. This version is much lighter and is still delicious, with the combination of shrimp and the sun dried tomatoes taking this dish from simple to sensational.

7 oz shrimp 1/2 medium onion 1/2 cup low fat ricotta cheese 1 clove garlic, crushed 1/4 cup sun dried tomatoes, not packed in oil 1 large basil leaves 1 1/2 sheets of lasagna noodles 1 cup tomato sauce 1 1/2 tablespoons shredded light mozzarella cheese.
Method
Preheat the oven to 350 degrees.In a non-stick pan sauté the onions until transparent.Add the shrimp and cook until just pink, 1 - 2 minutes. You want them slightly undercooked as they will cook more in the oven. Add ¾ of the tomato sauce, the basil and the sun-dried tomatoes and mix to combine.Put half the plain tomato sauce on the bottom of a 8 x 4 inch loaf pan and top with a layer of noodles.Spread half the shrimp mixture over the noodle and top with a little more tomato sauce, repeat with the remaining shrimp and top with a final layer of noodles.Spread the remaining tomato sauce over the last layer of noodle and top with the mozzarella cheese.Cover with aluminum foil and bake for 20 minutes.Remove the foil and bank for another 10 ? 15 minutes or until golden brown.Serve immediately.
