If you are not a fan of spicy food you can half the amount of the chipotle peppers in this dish, but I would suggest that you leave some in. These peppers are quite mild and give a lovely smokey flavour to these burritos. At the very least serve them with the chipotle mayonnaise, which again can be adjusted to suite your level of spice.
Simple Burritos
Makes 10 Ingredients
1 cup rice 1 cup low sodium chicken stock 1 teaspoon lime juice 8 oz boneless, skinless chicken breast, finely chopped 4 chipotle peppers (canned) very finely chopped 2 tablespoon tomato paste 4 teaspoons Tex mex seasoning 4 tablespoons low fat mayonnaise handful of cilantro chopped 2 small tomato, deseeded and chopped 4 tablespoons black beans (canned) rinsed and drained 10 medium tortillas 1/2 cup salsa
Method
Cook the rice according to the directions, substituting chicken stick for water. Mix in the lime juice and allow to cool slightly. In a non stick fry pan cook the chicken until just done, 3 - 4 minutes. Add the tomato paste, two of the chipotle peppers, the tex mex seasoning and mix to combine. If the mixture gets dry, add up to 1/4 cup of water. Mix the remaining chipotle peppers with the mayonnaise. Combine the chicken mixture with the tomato, beans and cilantro. Divide the rice and chicken mixture between the tortillas, roll and serve with salas and mayannaise. Alternatively, put everything in bowls on the table and let everyone serve themselves.
