Peking duck is a standby when I am entertaining.It sounds like a crazy thing to do, until I tell you that I buy the duck from my local Chinese BBQ restaurant and he chops it up for me.I buy the pancakes from the Chinese market and I buy the hoi sin.Basically all I need to do is cut up the cucumber and wrap the duck.The unfortunate flip side is that duck is really fatty, lovely, but fatty.In the research I did I found that one Peking duck pancake filled with fatty deliciousness is 475 calories and 17g of fat.Obviously that will change depending on how much duck you add etc, but the short version is that Peking duck is something that you should only eat occasionally.With this version you save just over 400 calories per serving and 15 grams of fat.It is not exactly the same, but as a very close copy it is delicious.
Peking Turkey
Makes about 50
Ingredients
2 ½ lb boneless turkey breast, skin on
3 tablespoons soy sauce
½ teaspoon garlic powder
½ teaspoon five spice powder
1 tablespoon Char Sui Sauce
½ cup plus 1 tablespoon Hoi Sin Sauce
1 ½ tablespoons honey
2 European cucumbers
2 bunches green onions
50 Duck pastry’s (available frozen in Chinese grocery stores)
Method
Place the turkey breast on a plate and leave uncovered in the refrigerator over night.This will dry out the bird and the skin will crisp more easily.Preheat the oven to 325 degrees and bake the breast for 1 ½ half or until the internal temperature reaches 160 degrees.While the turkey is baking combine the soy sauce, garlic powder, five spice powder, char sui sauce, 1 tablespoon of hoi sin and the honey.After the turkey has baked for 45 minutes baste with the marinade and then continue to baste three or four times so that it is well coated.When the turkey reaches 160 but the breast under the grill to further crisp the skin.The turkey needs to reach 170 degrees, but keep an eye on it because the marinade can burn.The turkey can be left for up to two days in the refrigerator.
To assemble. Slice the cucumber into three inch spears and the onion in to the same size. Heat the pancakes according to the instructions, typically microwave for 20 or 30 seconds.Spread ½ teaspoon of hoi sin on the pancake, a cucumber spear, a piece of onion and some of the turkey on the pancake and roll up.Alternatively sever everything on plates and let everyone help themselves.
