When I say sensational here I mean more from a child's point of view rather than an adults (although my husband is a huge fan). This dish has the double barreled advantage of being individual servings, so no sharing, as each person gets their own. Then there is the surprise layers of bologna as they eat. Basically kids think they have died and gone to heaven. The celery root in this dish in basically undetectable, but gives what is usually a nutrition free dish at least something good. Just keep that fact to yourself.

Sensational Mac and Cheese

Ingredients
10 oz elbow pasta 1/3 of a celery root, peeled and cut into cubes 2 cloves garlic 5 oz skim tasty cheese, shredded 1 1/2 cups skim milk 3 tablespoons all purpose flour 1 tablespoon dijon mustard 12 slices of low fat bologna 1 1/2 tablespoons parmesan cheese
Method
Boil the celery root until soft with the garlic, about ten minutes. Puree using either a hand blender or a food processor. (Note the smoother the puree the less detectable the vegetable is). Preheat the oven to 375 degrees F. Cook the pasta according to the instructions, set aside. Add the milk, flour and mustard to a saucepan and stir over medium heat until the sauce starts to thicken. Add the cheese a little at a time stirring between each addition to ensure that it stays smooth. Combine the cooked pasta with the vegetable puree and the cheese sauce. Cut the bologna slices into smaller circles to fit the inside of a one cup ramekin, discard the rest (unfortunately you will throw out about half the bologna, but it reduced the calories and fat). Place a spoonful of the pasta mixture in the bottom of the first ramekin, top with a layer of bologna, another spoonful of pasta, another slice of bologna and finally the last spoonful of pasta. Repeat for the remaining pasta and bologna. Sprinkle with parmesan cheese and bake for twenty minute or until mixture is just browned and starts to bubble. Cook for a further three minutes under the broiler. Wait a couple of minutes before serving to allow to cool slightly.
