You don't actually need to use just lobster here. I have used a combination of lobster and large shrimp which is almost as good. For me lobster as much about texture as flavour, so make sure that when you are chopping chop into large pieces so everyone knows that it is lobster they are eating.
A Note on Sodium - The high level of sodium in this dish comes from the lobster, which is 432 mg per 4 oz. If you are looking to reduce sodium, change the lobster to a lower sodium alternative such as shrimp, which is 254 mg per serve.
16 oz cooked lobster meat 1/2 cup of not fat mayonaise 1 teaspoon curry paste 1 green apple chopped 2 sticks of celery chopped 4 leaves of butter lettuce 8 slices of good grain bread
Method
There really is no method here, it is really case of mixing all the ingredients except the lettuce, putting a piece of lettuce on a slice of bread, dividing the lobster between the slices of bread and topping with another slice of bread. It's a sandwich, not terribly complicated, but very very good.
