I hope that you don't actually judge the quality of my recipes by this one, because it really is a huge cheat. However I have included it because, ever though I have used the chicken here in a wrap, the chicken alone as a weekday dinner it is a lifesaver, flavourful, low fat and so incredibly easy that you could do it in your sleep. You can throw all the ingredients into a bag in the morning, hurl the chicken in the fridge and when it is time for dinner all you have to do is fling the chicken at a grill and you are virtually done. The other thing that I love about this recipe is that inevitably whenever I serve it, people always think I have gone allot of trouble. This often illicits lots of compliments from guests, which, if you read on through my site, you will realize is something that I am very fond of.
A Note on the Sodium in this dish - The relatively high sodium level comes from the tandoori paste. The paste I used has 400mg of sodium per tablespoon, so if you are looking to cut down, reduce the paste and the yoghurt, or remove some of the marinade before cooking.
16 oz raw Chicken Breast 5 tablespoons tandoori chicken paste 1 cup plus 4 table spoons fat free plain yoghurt 1 tablespoon lemon juice 1 cucumber peeled, seeds removed and chopped 1 clove garlic grated handful of fresh mint finely chopped 4 whole wheat tortillas
Method
Mix tandoori paste, 4 tablespoon yoghurt and lemon juice together. Cut the chicken breasts into large slices (I usually cut each breast into about three pieces, depending on their size) Put the chicken and tandoori mix into a bag and marinade for a few hours (or overnight). Soak bamboo skewers in water for one hour. Thread the chicken on the skewers, grill over high heat until done (usually about 8 minutes, but this will depend on how thick you have cut the chicken). You can also barbecue the chicken, which is wonderful. Mix the remaining one cup of yoghurt with the garlic, mint and cucumber. warm the tortillas slightly (either zap them in the microwave for 10 seconds, or if you are barbecuing throw them in the grill for about 5 seconds. Remove the skewers and divide chicken between the four tortillas, top with the yoghurt sauce and warp in waxed paper for ease of transportation to your preferred picnic spot.
