This dish along with it's simple counterpart are cheat dishes and I am unapologetic about that. Who says that you need to be a slave to your oven just to produce tasty, low fat foods. I am a huge fan of all types of pastes and spice mixes and find that, particularly during the week, they are absolute life savers. A Note on the Sodium in this dish - The relatively high sodium level comes from the tandoori paste. The paste I used has 400mg of sodium per tablespoon, so if you are looking to cut down, reduce the paste and the yoghurt, or remove some of the marinade before cooking.
20 oz raw shrimp (try to buy the biggest ones you can) 5 tablespoons tandoori chicken paste 1 cup plus 4 table spoons fat free plain yoghurt 1 tablespoon lemon juice 1 cucumber peeled, seeds removed and chopped 1 clove garlic grated handful of fresh mint finely chopped 4 whole wheat tortillas
Method
Mix tandoori paste, 4 tablespoon yoghurt and lemon juice together. Peel and devien the shrimp and add to a bag with the tandoori mix. marinade for a one to two hours. I wouldn't leave them overnight. Soak bamboo skewers in water for one hour. Thread skewers through the shrimp from the tail to the tip so that they are perfectly straight. grill over high heat until done (usually about 2 minutes, but this will depend on how big the shrimp are). You can also barbecue, which is wonderful. Mix the remaining one cup of yoghurt with the garlic, mint and cucumber. warm the tortillas slightly (either zap them in the microwave for 10 seconds, or if you are barbecuing throw them in the grill for about 5 seconds. Remove the skewers and divide shrimp between the four tortillas, top with the yoghurt sauce and wrap in waxed paper. Be careful if the weather is warm and make sure that you keep these cool. giving your guest food poisoning is not what you want to be remember for.
