I know that egg white omelettes are good for you and low in fat, but personally I find them a little ?thin?.My solution to this is to use mainly egg whites with a little yolk to give the best of both worlds.
6 egg whites and two whole eggs 1 ½ cups of chopped cooked spinach 1 cup of thinly slices mushrooms 150g low fat feta 2 tablespoons water
Combine the eggs and the water and whisk well.Add ¼ of the egg mixture to a non stick pan and cook until just done.Put ¼ of the filling ingredients on ½ of the omelet and fold over.Serve immediately.
